Classic Turkey Brine

A classic turkey brine - this brine will help season your turkey and keep it moist during cooking.

Ingredients

  • 4 Litres apple cider
  • 1 1/2 cups kosher salt
  • 1/2 bunch Sage 
  • 1/4 bunch Thyme 
  • 5 cloves garlic smashed 
  • 1 lemon cut in 1/4s
  • 8 bay leaves
  • 4 Litres cold water
  • 20-pound turkey
  • Food Grade Bucket

Directions

  1. Combine 2L of apple cider and all the dry ingredients in a pot on the stovetop.
  2. Bring the mixture to a boil and then simmer for 5 mins until the salt is dissolved.
  3. Allow the mixture to cool completely, and then add the remaining liquids.
  4. Place the turkey in the bucket with the brine for 1 to 2 full days in the refrigerator.
  5. Remove the turkey from brine and allow the turkey to dry overnight in the refrigerator before cooking.
