Classic Turkey Brine
A classic turkey brine - this brine will help season your turkey and keep it moist during cooking.
4 Litres apple cider
1 1/2 cups kosher salt
1/2 bunch Sage
1/4 bunch Thyme
5 cloves garlic smashed
1 lemon cut in 1/4s
8 bay leaves
4 Litres cold water
Food Grade Bucket
Combine 2L of apple cider and all the dry ingredients in a pot on the stovetop.
Bring the mixture to a boil and then simmer for 5 mins until the salt is dissolved.
Allow the mixture to cool completely, and then add the remaining liquids.
Place the turkey in the bucket with the brine for 1 to 2 full days in the refrigerator.
Remove the turkey from brine and allow the turkey to dry overnight in the refrigerator before cooking.
