Coming from the bottom sirloin, Butcher Shoppe beef flap (bavette) is thin, but incredibly flavourful, and is always hand cut fresh to order. It has a coarse loose grain that marinades and aromatics (like minced garlic or ginger) love to seep into. Be sure to cut against the grain for ultimate tenderness!
Your favourite green sauce: chimichurri, salsa verde, zhoug or chermoula. It’s up to you.
We recommend that you cook beef flap (bavette) on the BBQ or in a cast-iron skillet on relatively high heat.
