Coming from the bottom sirloin, Butcher Shoppe beef flap (bavette) is thin, but incredibly flavourful, and is always hand-cut fresh to order. It has a coarse loose grain that marinades and aromatics (like minced garlic or ginger) love to seep into. Be sure to cut against the grain for ultimate tenderness!

Our recommendation involves cooking this flavourful cut on the BBQ or in a cast-iron skillet, utilizing relatively high heat to achieve the best results.

Before you start cooking, it's essential to prepare the beef flap properly. Begin by allowing the meat to come to room temperature. This ensures even cooking throughout the cut and helps maintain its juiciness. While the meat is resting at room temperature, you can season it to your liking. A simple blend of salt, pepper, and perhaps a touch of garlic powder or your preferred seasoning will enhance the natural flavours of the beef.

For those who prefer the smoky and charred flavours that come from the BBQ, this method is a top choice. Preheat your BBQ to high heat, aiming for a temperature between 450-500°F (232-260°C). Once your BBQ is properly heated, place the seasoned beef flap directly on the grill grates. If you opt for the cast-iron skillet method, ensure that the skillet is preheated thoroughly over high heat. You want it to be sizzling hot before you add the beef flap.
