The Quick Facts on Beef Bavette

  • Naturally raised
  • Free from added hormones and antibiotics

Coming from the bottom sirloin, Butcher Shoppe beef flap (bavette) is thin, but incredibly flavourful, and is always hand-cut fresh to order. It has a coarse loose grain that marinades and aromatics (like minced garlic or ginger) love to seep into. Be sure to cut against the grain for ultimate tenderness!

Goes Great With...

When it comes to finding the perfect accompaniment for our beef flap (bavette), the world of flavourful sauces opens up endless possibilities. Here at The Butcher Shoppe, we encourage you to explore all of the tantalizing options available for taking your meal to new heights.

  1. Chimichurri: This zesty Argentinean sauce bursting with fresh herbs, garlic, and a kick of red pepper flakes, is a fantastic choice. Its vibrant green hue and bold flavours provide a delightful contrast to the spiciness of our beef flaps. Drizzle it generously over your bavette for a burst of herbaceous and tangy goodness.
  2. Salsa verde: A classic sauce made from parsley, capers, garlic, and anchovies, is another exquisite option. Its bright and briny profile complements the savour notes of the beef flaps, creating a harmonious blend of flavours. A spoonful of salsa verde is all it takes to elevate your bavette to a gourmet level.
  3. Chermoula: a North African sauce made from a blend of fresh herbs, garlic, lemon, and cumin, offers a unique and exotic twist. Its citrusy and fragrant profile enhances the beef flap’s flavours with a burst of citrus and earthy spices.

Our Preferred Preparation for Beef Flap

When it comes to preparing beef flap, we have a preferred method that ensures the meat is cooked to perfection, delivering a mouthwatering dining experience. Our recommendation involves cooking this flavourful cut on the BBQ or in a cast-iron skillet, utilizing relatively high heat to achieve the best results.

Before you start cooking, it's essential to prepare the beef flap properly. Begin by allowing the meat to come to room temperature. This ensures even cooking throughout the cut and helps maintain its juiciness. While the meat is resting at room temperature, you can season it to your liking. A simple blend of salt, pepper, and perhaps a touch of garlic powder or your preferred seasoning will enhance the natural flavours of the beef.

For those who prefer the smoky and charred flavours that come from the BBQ, this method is a top choice. Preheat your BBQ to high heat, aiming for a temperature between 450-500°F (232-260°C). Once your BBQ is properly heated, place the seasoned beef flap directly on the grill grates. If you opt for the cast-iron skillet method, ensure that the skillet is preheated thoroughly over high heat. You want it to be sizzling hot before you add the beef flap.
