Directions
Season and sear the chicken: Coat the chicken pieces with extra virgin olive oil, ensuring you get some under the skin. In a large pan, heat more olive oil over medium-high heat. Sear the chicken on both sides until golden brown, starting with the skin side down. Once browned, remove the chicken and set it aside, reserving the pan for cooking the vegetables and sauce.
Sauté the vegetables: Return the pan to the heat and add 1 chopped onion, 2 chopped celery stalks, 1 chopped bell pepper, 8 ounces of sliced mushrooms, and 4 minced garlic cloves. Cook over medium heat, seasoning with 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon oregano, 2 sprigs of thyme, 2 tablespoons fresh parsley, and a pinch of red pepper flakes. Stir occasionally until the vegetables soften. Add the garlic towards the end and cook for an additional minute.
Prepare the sauce: Pour red wine into the vegetables and let it simmer for about 5 minutes to reduce. Stir in the crushed tomatoes and allow the sauce to gently simmer for another 10 minutes.
Simmer the chicken: Place the chicken back into the sauce. Cover the pan and cook on low heat for about 30 minutes, or until the chicken is fully cooked and tender. Garnish with parsley.
Serve with your choice of sides: This dish pairs perfectly with plain pasta or even rice for a hearty meal.
