The term "Provimi" signifies a premium standard in veal, specifically milk-fed, offering a meat that is tender, succulent, and lighter in colour compared to its grain-fed counterparts. Osso Buco is an Italian dish traditionally made from cross-cut veal shanks, braised to perfection with vegetables, broth, and wine.

The "centre cut" comes from the middle section of the veal shank. This prized cut is cherished for its tenderness and the ideal proportion of meat to bone. It captures the essence of Osso Buco, offering a cut that is not just flavourful but also texturally satisfying.

Our Preferred Preparation

Osso Buco is a versatile dish and while there are numerous ways to prepare it, we've listed our top three methods that bring out its rich, succulent flavours. Here are our preferred preparations:

Traditional Braised Osso Buco

Ingredients: Osso Buco cuts, diced onions, diced carrots, diced celery, garlic cloves, canned tomatoes or tomato paste, beef stock or chicken broth, white wine, olive oil, salt, and freshly ground black pepper.

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large ovenproof skillet, heat olive oil and brown the Osso Buco cuts on each side.
  3. Remove the meat and sauté onions, carrots, celery, and garlic until softened.
  4. Add the canned tomatoes, broth, and white wine to the skillet.
  5. Return the Osso Buco cuts to the skillet, making sure they are submerged in the liquid.
  6. Cover and transfer the skillet to the oven.
  7. Cook for 2-3 hours, until the meat is tender.
  8. Season with salt and pepper to taste before serving.

Slow Cooker Osso Buco

Ingredients: Osso Buco cuts, diced onions, minced garlic, chicken or beef broth, canned tomatoes, salt, and pepper.

Instructions:

  1. Place the Osso Buco cuts at the bottom of the slow cooker.
  2. Add diced onions, minced garlic, broth, and canned tomatoes on top.
  3. Set the slow cooker to low and cook for 6-8 hours.
  4. Season with salt and pepper before serving.

Osso Buco Milanese

Ingredients: Osso Buco cuts, Arborio rice, white wine, chicken or beef broth, saffron threads, Parmesan cheese, butter, salt, and pepper.

Instructions:

  1. Prepare the Osso Buco using the traditional braised method as outlined above.
  2. In a separate pan, cook Arborio rice with chicken or beef broth, adding a pinch of saffron threads.
  3. Once the rice is cooked, stir in grated Parmesan cheese and a dollop of butter.
  4. Serve the Osso Buco over a bed of saffron-infused Arborio rice.

Each of these methods offers a different and unique way to enjoy Osso Buco, accentuating its natural flavours while adding new dimensions to this classic dinner dish.

Your Osso Buco is hand-cut no more than 24 hours before it's delivered to you. This time-sensitive preparation ensures that the meat retains its optimum freshness and quality. After cutting, the Osso Buco is immediately vacuum-sealed. This process locks in the flavours, making sure you experience the product at its best. Your vacuum-sealed Osso Buco is then delivered using our fleet of specialized refrigerated trucks. These vehicles maintain a consistent temperature to preserve the freshness and quality of the meat.

We primarily deliver within the Greater Toronto Area, covering a range of approximately 250 to 300 kilometers from Toronto city. Most areas are eligible for next-day delivery. Currently, we are unable to deliver beyond Southern Ontario. 

We offer FREE next-day delivery on orders over $250. For orders below this threshold, a $25 delivery fee applies.
