Our Preferred Preparation for a Bone-In Prime Rib Roast 

Our favorite way to cook prime rib roast is the reverse sear for its ability to lock in the juices while creating a flavorful crust on the meat. 

Here’s how to do it: 

  1. Take the prime rib roast out of the refrigerator and let it sit at room temperature for about 1-2 hours before cooking to help it cook evenly. Meanwhile, preheat your oven to 450°F (232°C) to ensure a high initial heat for searing the roast.
  2. Generously season the roast with your preferred blend of herbs, spices, and salt—we recommend our bold and savory Signature Steak Spice.
  3. Place the seasoned prime rib roast, bone-side down, in a roasting pan or on a rack in a shallow roasting pan. Transfer the roast to the preheated oven and sear it for approximately 15 minutes to develop a flavorful crust.
  4. After searing the prime rib roast, reduce the oven temperature to 325°F (163°C). Continue roasting the prime rib for about 15-20 minutes per pound (450-500g). The ideal temperature for medium rare is around 130-135°F (54-57°C)—use a meat thermometer to check the internal temperature for your desired doneness.

Remember to insert the meat thermometer into the thickest part of the roast, away from the bone, for an accurate reading.

  1. Once the desired internal temperature is reached, remove the roast from the oven and transfer it to a carving board or serving platter. Tent the roast loosely with aluminum foil and let it rest for 15-20 minutes. This allows the juices to redistribute, resulting in a tender and succulent prime rib.
  2. Slice the prime rib roast across the grain into desired thickness. Aim for slices that are about ½ to 1 inch thick. Serve the standing rib roast with your preferred accompaniments, such as horseradish sauce, au jus, or a side of roasted vegetables.
