Pancetta, or Italian bacon as it is commonly known in North America, is a staple in a variety of Italian dishes. Cut from fresh, locally sourced pork belly, Butcher Shoppe pancetta is hand-rubbed in salt, pepper, and spices before going through the curing process. It’s salty and smooth, never overbearing in flavor, and comes in three-pound increments cut to order.
