Kobe beef comes from the Hyogo prefecture in Japan. Kobe beef refers to cuts from the Tajima strain of Wagyu cattle raised in the region. Only cattle that meet a specific marbling score of 6 or more with a fine meat texture and have passed weight limitations, among other strict criteria, are officially certified as “Kobe Beef.”
