Bone marrow is the soft, fatty tissue found along the inside of the bone. It’s used in many cultures and cuisines because it’s packed with lots of good fats, minerals and plenty of collagen. It’s like nature’s very own butter, with a rich meaty flavour!
Just about anything! Use bone marrow instead of butter or olive oil when roasting vegetables, spread it on toast, add to stocks and broths or even scoop out and melt on a beautifully cooked steak. We typically like to add something acidic (like a squeeze of lemon juice or some capers) to help balance the rich fattiness.
Throw the bone marrow on a tray, sprinkle with salt and pepper, and roast!
