Here, we present two of our favourite recipes that highlight the best of what boneless skinless chicken thighs have to offer: one for a savoury skillet dish and another for a delightful oven-baked meal. But don't forget you can also cook these skinless thighs in the slow cooker, instant pot, or cast iron skillet too.
- Garlic and Herb Skillet Chicken Thighs
Ingredients:
- 4 boneless skinless chicken thighs
- Salt and freshly ground black pepper, to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- 1/2 cup chicken broth
- Juice of 1 lemon
- 2 tbsp chopped parsley
Instructions:
- Season the chicken thighs with salt, pepper, oregano, basil, and paprika.
- Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through.
- Add minced garlic to the skillet and cook for a minute until fragrant.
- Pour in chicken broth and lemon juice, and bring to a simmer. Let the chicken cook in the sauce for a few more minutes.
- Garnish with chopped parsley before serving and plate with a side of mashed potatoes. This dish is flavorful and aromatic, with herbs and lemon juice enhancing the natural taste of the chicken.
- Honey Mustard Baked Chicken Thighs
Ingredients:
- 4 boneless skinless chicken thighs
- Salt and freshly ground black pepper, to taste
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 clove garlic, minced
- 1 tsp paprika
Instructions:
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together Dijon mustard, honey, olive oil, apple cider vinegar, minced garlic, paprika, salt, and pepper to create the marinade.
- Coat the chicken thighs evenly with the marinade and let them sit for about 15-20 minutes.
- Place the marinated chicken thighs in a baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
