Traditional Italian pasta dishes. Guanciale is the traditional meat used in pasta carbonara and pasta alla gricia. While many cooks have become accustomed to using bacon or pancetta in these dishes, guanciale has a richer, more buttery flavor and softer texture compared to bacon.

Guanciale is cured with a seasoning of salt, pepper, sage, garlic, and rosemary, then left to age for at least three months. This gives the meat a complex flavor profile that pairs well with pasta, eggs, and bitter, dark greens such as broccoli rabe.

Our Preferred Preparation for Guanciale

Most authentic Italian dishes require that you pan-fry your guanciale to render the fat. We recommend cutting your guanciale into small cubes before placing them in a pan over medium heat for 2-5 minutes.
