Guanciale is cured with a seasoning of salt, pepper, sage, garlic, and rosemary, then left to age for at least three months. This gives the meat a complex flavor profile that pairs well with pasta, eggs, and bitter, dark greens such as broccoli rabe.
Most authentic Italian dishes require that you pan-fry your guanciale to render the fat. We recommend cutting your guanciale into small cubes before placing them in a pan over medium heat for 2-5 minutes.
