These fresh St. Louis pork ribs will surprise you. Sourced from hogs raised in Ontario, our St. Louis pork spare ribs are cut and trimmed in-house by hand. Because we trim all of our pork ribs by hand, you get a lot more protein and a lot less “empty weight.” And the flavour? Tender. Succulent. Fall off the bone.

Additionally, St. Louis ribs go great with a variety of other meats, especially when you’re grilling or using a smoker. Some of our favourite pairings include pulled pork by using pork capicola butt and smoked brisket with local natural beef brisket, Australian wagyu beef brisket, or 100% grass-fed beef brisket.
Other great pairings with St. Louis ribs include grilled or smoked boneless skinless chicken breast and even hot Italian or honey garlic sausage links.
Our Preferred Preparation for Pork Side Ribs
St. Louis ribs are best when cooked for a long time in the oven or backyard smoker. Cooking ribs on the charcoal or gas grill provides great flavor, too, but the slow cooking process really delivers that fall-off-the-bone experience you’re looking for. A tip we love is to spray your ribs occasionally with apple cider vinegar so they come out moist and tender.
For oven-baked ribs, start by preheating your oven to 275°F (135°C). Next, season the ribs with a dry rub or marinade of your choice. Ensure both sides of the ribs are well-coated, and then place the ribs on a baking sheet or in a roasting pan, bone-side down. Cover the pan tightly with aluminum foil and bake the ribs in the preheated oven for about 2.5 to 3 hours. The low and slow cooking method will result in tender meat.
Remove the foil and brush the ribs with barbecue sauce if desired. Increase the oven temperature to 375°F (190°C) and bake for an additional 15-20 minutes or until the sauce is sticky and caramelized. As much as you want to dive in, allow the ribs to rest for a few minutes before cutting them into individual servings.
