It doesn’t get much better than whole boneless spatchcock chicken sourced from local Ontario farms. Air-chilled chicken, that is. While most Ontario-sourced chicken is water chilled, our whole spatchcock chickens are air chilled, helping to retain their beautiful colour and natural flavour without extra water weight. Like all chicken at The Butcher Shoppe, these whole boneless spatchcock chickens come from free-run farms in the local area. It’s fresh, all-natural chicken right from your own backyard.
Your order is always cut fresh to order no more than 24 hours before it is delivered to your door on our own fleet of refrigerated trucks.
Generally, we deliver to the Greater Toronto Area, around 250 to 300 kilometers from Toronto city. We use our own refrigerated trucks to complete your delivery. In most cases, next-day delivery is available. At this time, delivery is not available beyond Southern Ontario.

Grillmasters love to boast their own proprietary grilled chicken recipes. We like to keep it simple. Throw together your favorite marinade in a ziploc bag—say, oil, vinegar, honey, mustard, and lemon juice?—add chicken breasts from your deboned spatchcock chicken, and let it sit for a couple of hours. Once the grill is hot, give it a couple minutes on each side and bingo.
Get your broiler going on high. Slice your spatchock chicken breasts in half (lengthwise) before rubbing them down with olive oil, salt, pepper, and a cajun spice mix of your choosing. Place your boneless chicken on the rack and broil each piece for 4-5 minutes on each side.
We like to pat the chicken breast dry, then coat it in a mix of flour, salt, pepper, and garlic powder. Then we heat a generous drizzle of oil in a pan on medium heat before searing the protein 4-5 minutes on each side. The great thing about boneless spatchcock chicken is it lays flat for quick cooking.
