Directions
- Form the ground chorizo into a 4 oz patty, slightly wider than your English muffin (it will shrink slightly when cooked).
- Heat a skillet or griddle over medium-high heat. Cook the chorizo patty for 3–4 minutes per side, or until fully cooked through with a deep, caramelized crust. During the last 30 seconds, place the slice of cheese on top to melt.
- While the patty cooks, toast the English muffin halves in a dry skillet or toaster until golden and slightly crisp. For extra flavor, spread a bit of butter on the cut sides before toasting.
