Ingredients

The Butcher Shoppe Italian Sausage

2 tablespoons vegetable oil

4 green apples – diced to 1cm cubes

1 medium size brown onion - diced

1 fennel bulb - diced
-
1⁄4 cup brown sugar

1⁄4 cup apple cider vinegar

Salt and pepper to taste
Directions
Preheat a large fry pan to medium-high
Add oil and sausage. As the meat starts to fry, begin breaking into pieces
After 5 minutes, add apples, onion and fennel. Fry for a further 5 minutes. Stirring constantly
Add sugar and apple cider vinegar, stirring until mixed through
Reduce heat to low-medium and allow to cook for a further 30 minutes. Stirring every few minutes
TIP — If the mix looks like it is drying out, add water as you go
Season with salt and pepper to taste
