Short Ribs Go Great With...

Short ribs are a flavourful and succulent cut of beef that can transform any meal into an indulgent culinary experience. Known for its rich marbling and tender meat, short ribs are often slow-cooked to unlock their full potential. These ribs make an ideal pairing with various sides, beverages, and even other cuts of meat. From classic comfort foods to sophisticated sides, here are some exceptional accompaniments to consider when you’re cooking short ribs:

  • Pork Belly: The fatty richness of pork belly can serve as an interesting contrast to the beefy intensity of short ribs. When both are cooked to perfection, they can provide a luxurious blend of textures and flavours.
  • Sausage Links: Whether it's Italian sausage, bratwurst, or another favourite, a selection of sausages can add a variety of flavours and textures to a meal that includes short ribs. The spiced, smoky notes of sausage can play well against the deep richness of the ribs.
  • Duck Breast: Duck breast, with its rich, fatty flavour, pairs beautifully with short ribs. Combining the duck's unique taste and the beef's hearty flavour creates a luxurious and satisfying meal.
  • Red Wine: A bold red wine, like a Cabernet Sauvignon, complements the deep, beefy flavours of short ribs. The wine's tannins can cut through the fat, making each bite even more enjoyable.

Whether you’re looking for a comforting classic or a dish with a gourmet twist, here are two of our favourite recipes that showcase the best of what boneless beef short ribs have to offer.

  1. Classic Braised Boneless Beef Short Ribs

Ingredients:

  • 2 lbs boneless beef short ribs
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Instructions:

  • Preheat your oven to 325°F (163°C).
  • Season the short ribs with salt and pepper.
  • In a large ovenproof pot, heat the olive oil over medium-high heat. Add the short ribs and brown them on all sides. Remove the ribs and set aside.
  • In the same pot, add the onion, carrots, and celery. Cook until softened. Add garlic and cook for another minute.
  • Stir in the tomato paste and then add the red wine, scraping up any browned bits from the bottom of the pot.
  • Add the beef broth, thyme, and rosemary. Bring to a simmer.
  • Return the short ribs to the pot. Cover and transfer to the oven.
  • Braise for about 2.5 to 3 hours, or until the meat is very tender.
  • Serve with mashed potatoes or creamy polenta.
