Sometimes called the “Italian miracle worker,” pancetta—or cured pork belly—brings out the best in a range of classic Italian dishes. Our own pancetta is rolled in a signature blend of salt, pepper, and spices, all by hand. From there, each piece is smoked, cooked, and dried and then sliced to order in one-pound increments.
