Ingredients

Australian Wagyu Bavette Steak

1 cup all-purpose flour

1 egg

1 cup buttermilk
-
1 tbsp kosher salt (plus extra for seasoning the steak)

1 tsp onion powder

1 tsp garlic powder

1 tsp Spanish paprika

1 tsp cayenne powder
-
1 cup Honeycomb cereal, crushed

1 cup Froot Loops cereal, crushed

Hot honey
-
Maple syrup
-
1 can Whipping Cream
-
1 recipe of your favourite waffles
Directions
Step 1: Prep the station
Set up two shallow pans or bowls — one for the wet mixture, one for the dry mixture.
In the first pan, crack the egg, add the buttermilk, and whisk until fully combined. Set aside.In the second pan, combine the flour, kosher salt, onion powder, garlic powder, paprika, and cayenne. Mix well to evenly distribute the seasonings.
Also, have your waffle batter made and ready to go!Step 2: Pound the steak
Place the Wagyu steak between two sheets of parchment paper. Using a rolling pin or meat mallet, pound the meat flat until it is even in thickness.Season both sides lightly with kosher salt. You can do this step ahead of time; keep the steak chilled until about 20–30 minutes before cooking so it comes closer to room temperature.
Step 3: Time to Fry
Prepare a large pot with enough canola oil for deep frying. Slowly bring the temperature up to 350°F (175°C).Dredge the pounded steak in the flour mixture first, coating well and shaking off excess. Next, dip it into the wet mixture, letting any excess drip back into the pan. Finally, return it to the flour mixture for a second coating — this time pressing the flour firmly into the meat so it sticks well and forms a solid crust.
Set the coated steak on a wire rack for 5–10 minutes to allow the coating to adhere.
Once the oil reaches 350°F, carefully lower the steak into the pot. Fry for about 3 minutes per side, even if fully submerged, flipping gently with tongs to ensure both sides cook evenly. Remove and place on a wire rack to cool slightly.Step 4: Make the Waffles
While the steak rests, cook your waffles. Use your favourite waffle recipe.
Make all of your waffles and set them aside. Any extras can be frozen in a zip-top bag for another day.Step 5: Assemble!
Place one waffle on a plate. Set the fried steak on top of the waffle. Add a generous pile of whipped cream over the steak.Sprinkle with crushed Honeycomb cereal, followed by crushed Froot Loops.
Drizzle with hot honey and maple syrup.
