ROAST POTATOES WITH PANCETTA

Ingredients
- 300g The Butcher Shoppe pancetta / Sliced
- 2 tablespoons vegetable oil
- 1kg small to medium gold potatoes / Whole
- 1 medium size brown onion - diced
- 2 tablespoons crushed garlic (optional)
- Scallion – sliced for garnish
- Salt and pepper to taste
Directions
- Preheat oven to 450F (230C)
- Preheat large frypan to medium-high
- Add vegetable oil to pan
- Add potatoes, move in pan every few minutes
- Season with salt and pepper
- Once the potatoes begin to brown (approximately 15 minutes) add pancetta and garlic, mix through and place in oven
- Allow to roast in oven for 20-25 minutes or until potatoes are soft through the middle
- Sprinkle with scallions and serve
