ROAST POTATOES WITH PANCETTA

Ingredients

  • 300g The Butcher Shoppe pancetta / Sliced
  • 2 tablespoons vegetable oil
  • 1kg small to medium gold potatoes / Whole
  • 1 medium size brown onion - diced
  • 2 tablespoons crushed garlic (optional)
  • Scallion – sliced for garnish
  • Salt and pepper to taste

Directions

  1. Preheat oven to 450F (230C)
  2. Preheat large frypan to medium-high
  3. Add vegetable oil to pan
  4. Add potatoes, move in pan every few minutes
  5. Season with salt and pepper
  6. Once the potatoes begin to brown (approximately 15 minutes) add pancetta and garlic, mix through and place in oven
  7. Allow to roast in oven for 20-25 minutes or until potatoes are soft through the middle
  8. Sprinkle with scallions and serve
