Whole Wild Boar Bacon

Wild boar runs much leaner than domestic pork, so the bacon develops a deeper, slightly gamey flavour rather than the heavy fat you see in standard pork belly.

Grill over medium heat, turning often. Cook to 160°F internal. The bold flavour pairs well with whole-grain mustard and sauerkraut.

Refrigerate wild boar and use within 3-5 days of purchase. Freeze vacuum-sealed for up to 6 months for best quality.
