Tips from the Butcher

The Prime cannon cut is taken from the very centre of the striploin, where the grain runs the most evenly. Butchers favour this section because it produces the most consistent steaks on the entire loin, with perfect structure from edge to edge.

Preferred Preparation

Because the cannon cut comes from the most uniform centre of the striploin, it cooks very evenly. Sear over high heat for 3–4 minutes per side, finish to medium-rare (130–135°F / 54–57°C), and rest 5–7 minutes before slicing.

Storage & Freshness

Arrives fresh. Keep refrigerated and use within 3–5 days, or freeze for longer storage.
