Coming from the bottom of the sirloin, wagyu (kobe) tri-tip (peeled) gets its name from its triangular shape. Popular in California, it’s often described as a mix between a steak and a brisket.

Preferred Preparation

It's best cooked over high heat to develop a proper crust, then finished gently to medium-rare (130–135°F / 54–57°C). Let the roast rest 10 minutes, then slice thinly against the grain to keep the meat tender.
