Tips from the Butcher

Wagyu tenderloin is buttery soft — wrap lightly in butter and sear quickly at medium heat. Resist the urge to overcook.

Preferred Preparation

Season with salt only and sear in a hot pan 2 minutes per side to 130°F. The marbling of authentic Kobe Wagyu is so extraordinary that anything more would only get in the way.
