Top sirloin comes from the sirloin just behind the short loin, a section known for producing well-structured steaks with a fine, tight grain. It’s a cut butchers respect for its balance of tenderness and clean muscle structure.

Preferred Preparation

Sear over high heat 3–4 minutes per side for medium-rare. Rest a minimum of 5 minutes before serving to lock in juices.
