Our Preferred Preparation for Whole Rabbit Meat

After allowing the rabbit to thaw completely, we recommend cutting the meat into smaller pieces and browning it in a dutch oven. Once browned, remove the rabbit meat and build a delicious base for a sauce (think onions, white wine, butter, chicken stock, whole grain mustard and thyme or sage), before adding the pieces back in to simmer with the lid on until tender.
