Piedmontese Beef

Beef from Italy’s Piedmont Region

Piedmontese isn’t a name you see at every butcher counter.

Here’s what makes this centuries-old breed worth knowing!

The History

Originating from Italy’s Piedmont region, Fassona Piedmontese is a rare heritage cattle breed known for its naturally lean yet exceptionally tender beef. Today, we work with local Ontario farms raising Fassona cattle with the same careful approach to feeding and animal welfare that made the breed so well known throughout Northern Italy.

The Breed

Fassona Piedmontese is a rare Italian heritage cattle breed native to the provinces of Asti, Cuneo, and Turin. Known for a naturally occurring genetic trait that creates a heavily muscled yet lean structure, the breed produces beef that is exceptionally tender while remaining lower in fat and cholesterol than traditional beef programs.

The Feed

Traditionally raised on natural forage, grasses, and regional grains, Fassona Piedmontese cattle are known for producing beef with a cleaner flavour profile and lighter finish compared to heavily grain-fed programs. The result is beef that is healthy and without excessive fat or heaviness.

A Heritage Beef - Handmade the Italian Way!

We’re introducing Fassona Piedmontese to The Butcher Shoppe through a product that feels right at home with its Italian roots. Our Piedmontese Beef Meatballs pair the naturally lean, tender character of this heritage beef with classic Italian herbs and spices. Give them a good sear, finish them gently in a pot of tomato sauce, and you’ve got a simple way to experience what makes this breed so special.
