Where It Started
Our family's story began in the meatpacking district of New York, three generations ago. We learned the craft from the ground up. How to age beef properly, how to source heritage pork, how to approach every cut with intention.
When founder Allan Weisberg opened The Butcher Shoppe in Toronto's Kensington Market in 1984, he brought that knowledge with him, along with a simple belief: every customer deserves a butcher who treats their order like it matters.
Because it does.
It's going on your table, in front of the people you care about.
Forty years later, that belief hasn't changed.
The Butcher's Craft
A butcher's job is to know meat better than anyone and to prepare it exactly the way you need it.
Hand-cut. No machines. No shortcuts. Just craft.
Every order is hand-selected by our butchers. Every cut is trimmed on the day of your delivery. Nothing sits in inventory. Nothing is pre-packaged. Your meat arrives fresh because we cut it fresh.
That means when it reaches your kitchen, the hard work is already done. The trimming, the aging, the portioning. All handled by someone with decades of expertise.
You just cook it and let the great ingredients do the work.
Today, we have one of the largest selections of premium cuts in the GTA and we still hand-cut every order.
We've grown from a single Kensington Market shop to one of the broadest premium selections in the GTA.
Japanese A5 Wagyu, Australian Wagyu, US Wagyu, New Zealand grass-fed beef, Argentine beef, Prime cuts, heritage pork, and more.
But we're selective about who we work with. We partner only with farms and producers who share our standards: proper animal welfare, considered feeding practices, patience in the process. How an animal is raised directly shapes what ends up on your plate.
