Tips from the Butcher

Tenderloin comes from a protected muscle tucked along the inside of the backbone that does almost no work during the animal’s life. Because of that, it develops the finest grain of any cut and is naturally the most tender steak on the animal.

Preferred Preparation

Keep it simple and let this Wagyu beef speak for itself. We particularly love a pan-fried preparation done in a cast-iron skillet, always striving for that lovely crusty sear on the outer edges.
